EDITH (“LUCY”), was the third sibling of four children. She was Born in 1925 to Clarence Brewer and Ina (Ferguson) Brewer. Throughout her life in Springfield, Edith was always called “Lucy” or “Cille”, by friends and family. She lived in Springfield, for 85 years. Then for assistance and access to Healthcare, she spent the last 10 years of her life in Kansas City with her niece, Helen Hurst.
Edith was preceded in death by husband Robert (Bob) Spencer, her mother Ina and father Clarence. All of her siblings, including her sister Annabelle (Brewer) Jenkins of Columbus, Ohio, and her brothers, Nathan and Carl Brewer. She also endured the passing of 2 Grandchildren Charles and Mia Mitchell.
Edith leaves to mourn her passing, her daughter Cheryl Mitchell, Niece and caregiver Helen Hurst, grandson Cameron Mitchell, a Great-Granddaughter Ina Mitchell, and Great-Great Granddaughters Kelsey and Madison Mitchell. A host of nieces, nephews, cousins and warm, dear friends who shared many enjoyable memories with Her.
Edith learned to cook very early in life, and as such, chose to develop a career in gourmet cooking and food service. Her memorable career path in the field was more than 50 years as a Salad, dessert and pantry chef at Hickory Hills Country Club, and various other quality food service entities in Springfield. Even in retirement. she enjoyed entertaining and preparing fabulous and exotic meals and desserts for friends and family.
Edith loved service and participation in helping those in need. She was an active member of the Norval Stafford Post of the Springfield American Legion auxiliary, the Red Hats, and several other service/social Organizations. Edith also loved animals, especially dogs and horses. She always bred and raised dogs. Her favorites were miniature Yorkies and Miniature German Schnauzers. She often went horseback riding and she and Bob attended the Boley Rodeo in Oklahoma nearly every year.
Lucy was an active member of Gibson Chapel Presbyterian Church. After moving to Kansas City, she affiliated with the Covenant Presbyterian Church.
Funeral services will be at Noon, Friday, December 4, 2020, at Greenlawn Funeral Home North, with burial to follow, at the Springfield National Cemetery. Visitation will be one hour before services, from 11:00 a.m. till noon.
