Well-known Springfield restaurateur, David Wing Yin Leong, passed away on July 21, 2020 after a short illness. Renown as the inventor of Springfield-style cashew chicken, David left his mark on the many thriving businesses that carry a version of his iconic dish. Born in Canton (Guangdong), China on August 18, 1920, David immigrated to the United States to support his family

We are saddened by his passing. A great American for us to honor and respect with his being a veteran of World War II, as well as his contribution to the Springfield community. He will always be remembered. It was a joy to visit with him at Leong’s. We’ve always enjoyed dining in the restaurant, and also enjoy the convenience of carry out service. He created the well known Springfield Cashew Chicken dish and now it’s known all over the world. The Chinese people are very proud of his accomplishments and his contributions.
